mango quinoa chicken
WHAT YOU NEED:
Mango
Cherry Tomatoes (quartered)
Pickled Red Onion
Cilantro
Lime
Olive Oil
Salt and Pepper
Quinoa
Chicken
How to make it:
Rub spice rub on chicken and put olive oil in a pan and cook it up (5 mins on each side) or you can throw the chicken on the grill.
Chop up mangos, cherry tomatoes, and cilantro and mix with a smidge of olive oil.
Cook your quinoa and mix it in with the tomato mango mixture.
Plate with quinoa, chicken, lime and pickled red onions.
