my go to breakfast

Let me preface by saying this is THE Sarina breakfast. I eat this and it’s my favorite go to. It’s come down to a science. I eat it so often, so let me share it with you.

WHAT YOU NEED:

  • Good Bread (emphasis on good – you want it to get toasty with a crunch in the toaster... soggy bread with avocado is a ultimate no no)

  • Avocado

  • Egg

  • Shredded Sharp Cheddar Cheese

  • Garlic Onion Chili Oil

  • Pickled Onion

  • Goat Cheese Feta

  • Frank’s Hot Sauce (impt.)

  • Sprouts of any kind will do...I’m still figuring out which I like best.

  • Fruit. Any fruit

How to make it:

  • First wash and prep fruit, then prep avocado by cutting in half, slicing while in the shell and putting it aside.

  • Next throw bread in the toaster, then start some olive oil on a pan on med-high heat.

  • Prep your egg by whisking it up with some sharp cheddar cheese and some garlic chili oil.

  • Add the egg mixture to your pan with oil and scramble that shi. Don’t over scramble. As it forms pull the formulated sections to the side and let the remaining liquidey egg travel in pan until it all cooks.

  • Pull toast out when it is browned and crisp with a soft crunch.

  • Spoon out the avocado and smush it directly on the toast.

  • Add salt and pepper on top of avocado.

  • Add egg on top of avocado.

  • Add some hot sauce. Frank’s has the perfect tang.

  • Add feta, pickled onions, and sprouts

    And then you’ve done it. Now, I used to always cut my toasts in half and eat this as a sandwich but you can also just do a toast version. They both taste good.
