peet’s favorite roasted carrots

WHAT YOU NEED:

  • Big ole carrots (my favorites are the tri-colored ones from TJ’s)

  • Salt + Pepper

  • Honey

  • Dried Basil + Oregano

How to make it:

  • Preheat oven to 415 degrees.

  • Cut up carrots depending on their girth, half or quarter them long ways.

  • Mix them up with olive oil, salt, pepper, basil and oregano.

  • Lay them out on pan with tin foil face down.

  • Drizzle honey on top of all of them (don’t over honey them, it’ll caramelize and turn into a gooey sticky mess in the oven)

  • Cook for about 10 mins or until the tips start turning brown.
