PISTACHIO CHOCOLATE CHIP COOKIES

WHAT YOU NEED:

  • 1 cup unsalted butter

  • 2/3 cup chopped pistachios

  • 1/2 tsp ground cardamom

  • 3/4 cup light brown sugar

  • 1/2 cup regular sugar

  • 1 egg

  • 1 tsp vanilla extract (I pour w/ my heart)

  • 1 + 2/3 cup flour

  • 1/2 tsp baking soda

  • chocolate bar roughly chopped

  • flaky salt

How to make it:

  • First brown the butter on medium heat. Once it’s browned add 2/3 of the chopped pistachios and the cardamom and mix for a few minutes.

  • Remove the butter from heat and let it cool in the fridge for 10-15 mins.

  • Once butter is cooled, add sugars and mix.

  • Add egg and vanilla and mix some more.

  • Sift in the flour and add the baking soda and fold it in. Once folded add the chopped chocolate.

  • Let the dough cool in the fridge for 10ish mins and preheat the oven to 350 degrees.

  • Form small balls of dough and place on pan to cook for 10ish mins until the edges are slightly brown and the tops look glossy.
