pesto orzo + broccolini

WHAT YOU NEED:

  • Orzo

  • Peas

  • Pine Nuts

  • Can of Canellini Beans

  • Nutritional Yeast

  • Broccolini

  • Garlic

  • Olive Oil

  • Butter

  • Pepper

How to make it:

  • Boil orzo for five mins.

  • Add peas and boil for 2-3 mins.

  • Toast pine nuts.

    Pesto Sauce

  • Blend half pine nuts, basil, garlic, olive oil, beans and some yeast.

  • Add a bit of pasta water until you have a nice sauce consistency.

  • Add sauce to orzo and top with pine nuts and parmesan cheese.

    Broccolini

  • First bring a pot of water to boil and blanch your broccolinis (they should become a bright green color)

  • In a pan, melt some butter and olive oil on med-high heat.

  • Slice your garlic cloves thinly and throw those in until they start bubbling.

  • Add your broccolini into the pan and add some lemon juice and pecorino romano. Cook until it is slightly browned.
