PEACH PANZANELLA SALAD
WHAT YOU NEED:
Tomato
Cucumber
Peach
Shallot
Garlic
Basil
Cheese of some sort (I used mozzarella pearls)
French bread
Lemon
Olive Oil
How to make it:
Cut your bread into 1” cubes and fry them in a pan with olive oil on medium heat until they’re golden brown and crispy
Chop up your peaches, cucumber and tomato into similar size cubes
Slice up the shallots finely
In a large bowl combine olive oil, lemon juice+zest, 1 clove of garlic and red pepper flakes. Add everything but the bread until you are ready to serve to avoid the bread getting soggy
Top with basil
