PEACH PANZANELLA SALAD

WHAT YOU NEED:

  • Tomato

  • Cucumber

  • Peach

  • Shallot

  • Garlic 

  • Basil

  • Cheese of some sort (I used mozzarella pearls)

  • French bread

  • Lemon

  • Olive Oil

How to make it:

  • Cut your bread into 1” cubes and fry them in a pan with olive oil on medium heat until they’re golden brown and crispy 

  • Chop up your peaches, cucumber and tomato into similar size cubes

  • Slice up the shallots finely 

  • In a large bowl combine olive oil, lemon juice+zest, 1 clove of garlic and red pepper flakes. Add everything but the bread until you are ready to serve to avoid the bread getting soggy

  • Top with basil
