nani’s veggie pilaf

WHAT YOU NEED:

  • Cumin seeds

  • Turmeric

  • Garam masala

  • Yellow onion (thinly sliced)

  • Carrots (cut into 1” strips)

  • Potatoes (cut into 1” strips)

  • Cauliflower

  • Salt

  • Rice

How to make it:

  • Rinse rice and soak for 15-20 mins before. For 2 cups rice, use 3 1/2 cups water.

  • Prep your veggies by cutting them like french fries about 1-1 1/2” long.

  • Heat pan with oil and add cumin seeds on medium/high heat.

  • Add and saute sliced onions until nice and limp and golden.

  • Add potatoes and carrots and cook for 3ish mins.

  • Add cauliflower and salt and cook for 5ish mins.

  • Add peas and rice and water and some more salt and bring it to a boil.

  • Once it is boiling, reduce to a simmer and cover for 20ish mins while it cooks, without stirring.

  • Once cooked, add some lemon juice and mix gently.
