nani’s veggie pilaf
WHAT YOU NEED:
Cumin seeds
Turmeric
Garam masala
Yellow onion (thinly sliced)
Carrots (cut into 1” strips)
Potatoes (cut into 1” strips)
Cauliflower
Salt
Rice
How to make it:
Rinse rice and soak for 15-20 mins before. For 2 cups rice, use 3 1/2 cups water.
Prep your veggies by cutting them like french fries about 1-1 1/2” long.
Heat pan with oil and add cumin seeds on medium/high heat.
Add and saute sliced onions until nice and limp and golden.
Add potatoes and carrots and cook for 3ish mins.
Add cauliflower and salt and cook for 5ish mins.
Add peas and rice and water and some more salt and bring it to a boil.
Once it is boiling, reduce to a simmer and cover for 20ish mins while it cooks, without stirring.
Once cooked, add some lemon juice and mix gently.
