harissa turkey meatballs

WHAT YOU NEED

TURKEY MEATBALLS:

  • 1 lb ground turkey

  • 1 egg

  • ¼ cup bread crumbs

  • 4 cloves minced garlic

  • 1 large spoonful of harissa paste

  • 1 tbsp chopped parsley

  • 1 tbsp chopped chives

  • 1 tbsp chopped dill

  • 1 tsp onion powder

  • 1 tsp cumin

  • 1 tsp salt

CREAMY TOMATO ORZO:

  • 2 tbsp olive oil

  • 1 cup orzo

  • 2 cups chicken broth

  • ½ onion, diced

  • a few handfuls of cherry tomatoes

  • 1 large spoonful of tomato pasta sauce

  • 4 cloves minced garlic

  • 2 tbsp chopped parsley

  • ¼ cup shredded parm

How to make it

MEATBALLS

  • Preheat oven to 425 degrees.

  • Add all ingredients to a bowl and mix until combined, but don’t overmix.

  • Shape into 1 inch balls and place on a baking sheet. Bake for about 12 minutes.

  • I use a meat thermometer to double check they have reached 165 degrees internal temperature.

How to make it

ORZO

  • Sauté onion in olive oil over medium heat until they have softened.

  • Add in garlic and saute for 2 more minutes until fragrant, mixing so garlic does not burn.

  • Add orzo and brown (about 5 minutes and stir frequently so it does not burn)

  • Add in cherry tomatoes and drizzle with olive oil, sautéing for a few minutes before adding in 1 cup chicken broth, pasta sauce, and salt/pepper.

  • Bring to a simmer. Let simmer for about 5 minutes or until most of the liquid is absorbed. Add another cup of chicken broth, cover and let simmer for another 5 minutes.

  • Add in meatballs and serve with parsley and grated parmesean
