harissa turkey meatballs
WHAT YOU NEED
TURKEY MEATBALLS:
1 lb ground turkey
1 egg
¼ cup bread crumbs
4 cloves minced garlic
1 large spoonful of harissa paste
1 tbsp chopped parsley
1 tbsp chopped chives
1 tbsp chopped dill
1 tsp onion powder
1 tsp cumin
1 tsp salt
CREAMY TOMATO ORZO:
2 tbsp olive oil
1 cup orzo
2 cups chicken broth
½ onion, diced
a few handfuls of cherry tomatoes
1 large spoonful of tomato pasta sauce
4 cloves minced garlic
2 tbsp chopped parsley
¼ cup shredded parm
How to make it
MEATBALLS
Preheat oven to 425 degrees.
Add all ingredients to a bowl and mix until combined, but don’t overmix.
Shape into 1 inch balls and place on a baking sheet. Bake for about 12 minutes.
I use a meat thermometer to double check they have reached 165 degrees internal temperature.
How to make it
ORZO
Sauté onion in olive oil over medium heat until they have softened.
Add in garlic and saute for 2 more minutes until fragrant, mixing so garlic does not burn.
Add orzo and brown (about 5 minutes and stir frequently so it does not burn)
Add in cherry tomatoes and drizzle with olive oil, sautéing for a few minutes before adding in 1 cup chicken broth, pasta sauce, and salt/pepper.
Bring to a simmer. Let simmer for about 5 minutes or until most of the liquid is absorbed. Add another cup of chicken broth, cover and let simmer for another 5 minutes.
Add in meatballs and serve with parsley and grated parmesean
