GRILLED FENNEL & SWEET POTATO SALAD

WHAT YOU NEED:

  • 1 sweet potato (cut into 1/2 inch rounds)

  • 1 fennel stalk

  • 1 honey crisp apple

  • 1 shallot

  • Juice from a lemon

  • Olive oil

  • Salt + Pepper

How to make it:

  • First prep your sweet potatoes and fennel. Slice the sweet potato into 1/2” rounds. Cut the needly frayed ends of the fennel off the main bulb. Cut the bulb into wedges. Mix the sweet potatoes and fennel with olive oil, salt and pepper.

  • Heat up your grill on medium-high heat and brown the sweet potatoes and fennel. About 10-20 minutes total, flipping the veggies as they brown.

  • While the sweet potatoes and fennel is grilling, prep the rest of your salad. Roughly chop up the frayed fennel ends and throw those into a bowl.

  • Thinly slice your apple and finely dice your shallot. Throw it all into the bowl with the chopped fennel and mix with olive oil, lemon juice and salt + pepper.

  • Once your sweet potatoes and fennel are done grilling, make sure to pause and take a whiff of these grilled veggies. It smells fire. Then add them into the bowl of apples, chopped fennel and shallot and mix it all up. It’s now ready to eat!
