CREME BRULEE COOKIES
WHAT YOU NEED:
Icing
225g plain cream cheese
180g brown sugar
100g powdered sugar
2 tsp vanilla bean paste
Dough
313g all purpose flour
1/2 tsp baking powder
1/2 tsp salt
250g granulated sugar
1 cup softened butter
1 egg
1 tbsp vanilla bean paste
caster sugar
How to make it:
Icing
Add the cream cheese and brown sugar and whip it together.
Add the powdered sugar and vanilla bean paste and mix it up.
Let sit in fridge until ready to use.
Dough
Add flour, salt and baking powder into a bowl and mix up.
In a separate bowl, whip up your butter and sugar with an electric mixer on high for about 2 minutes until that shi is fluffy.
Add in your egg and vanilla bean paste and mix on medium for 1-2 mins.
Slowly start adding in you flour mixture on low until it is all incorporated.
Preheat your oven to 350 degrees and line you baking sheets with parchment paper.
Start making your dough balls by scooping a spoon full of dough and rolling it into a ball with your hands.
Prepare a small bowl of caster sugar. After your dough balls are made, you are going to coat each ball in caster sugar and then slightly flatten the dough ball on your baking sheet. You should have about 6 flattened balls on each sheet.
Bake for 9-10 mins.
After baking, let the cookies cool and then spread a thin layer of icing on each with a spoon.
Then you are going to top the icing with a layer of caster sugar and torch tf out of that sugar until it caramelizes and hardens on the top of the cookie.
