banana + oat chocolate chip cookies

WHAT YOU NEED:

  • ½ cup unsalted butter

  • 1 small banana

  • 1 tsp. ground cinnamon

  • ½ cup light brown sugar

  • ¼ cup granulated sugar

  • ½ tsp. vanilla

  • 1 cup + 1 ⅓ tbsp all purpose flour

  • ⅔ cup rolled oats

  • ½ tsp. baking powder

  • ½ tsp. baking soda

  • ½ tsp. salt

  • ¾ c semi-sweet chocolate chips

How to make it:

  • Brown the butter in a small saucepan over medium heat. Once it has browned, let it cool in the fridge.

  • While the butter is browning, smash up your banana in a bowl and mix in the cinnamon.

  • Once the butter has cooled, add it to the banana mixture along with the sugars and vanilla.

  • Fold in the flour, rolled oats, salt, baking powder and soda until just a few streaks remain. Then add in the chocolate.

  • Cover with plastic wrap and let cool in the fridge for 30ish mins.

  • Once the dough had cooled, preheat the oven to 350 degrees. Make dough balls and let the cookies bake until the edges are golden brown and the tops are glistening.
