banana + oat chocolate chip cookies
WHAT YOU NEED:
½ cup unsalted butter
1 small banana
1 tsp. ground cinnamon
½ cup light brown sugar
¼ cup granulated sugar
½ tsp. vanilla
1 cup + 1 ⅓ tbsp all purpose flour
⅔ cup rolled oats
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
¾ c semi-sweet chocolate chips
How to make it:
Brown the butter in a small saucepan over medium heat. Once it has browned, let it cool in the fridge.
While the butter is browning, smash up your banana in a bowl and mix in the cinnamon.
Once the butter has cooled, add it to the banana mixture along with the sugars and vanilla.
Fold in the flour, rolled oats, salt, baking powder and soda until just a few streaks remain. Then add in the chocolate.
Cover with plastic wrap and let cool in the fridge for 30ish mins.
Once the dough had cooled, preheat the oven to 350 degrees. Make dough balls and let the cookies bake until the edges are golden brown and the tops are glistening.
